Molasses Cookies

We all have those one or two food items that always remind us of Christmas right? Something you remember smelling, or something your mom made every year. Well for me, my favorite was always my mom’s molasses cookies. Ugh. I simply love them. If you have been around me long enough you have tasted them once or twice. I make them ALL the time. Not just at Christmastime.

These cookies are the perfect amount of holiday spices all wrapped up in a warm cookie! I am basically obsessed so I thought I would share my favorite holiday cookie with you!

Ingredients:

-3/4 Cup Vegetable Shortening

-1 Cup Sugar

-1/2 Cup Molasses

-2 Cups Flour

-1 teaspoon Cinnamon

-1/2 teaspoon Ginger

-1/2 teaspoon Salt

-1 Egg

-2 teaspoons Baking Soda

(note: now I do not add this, but my mom adds 1/2 teaspoon of Cloves to her recipe. I just prefer it without it)

Directions:

Cream vegetable shortening and sugar. Add molasses and eggs. Beat well. Sift flour, soda, cinnamon, ginger and salt. Add to first mixture. Mix well and chill at least one hour. Form into 1-inch balls. Roll in Sugar and press with a fork. Place on greased cookie sheet and bake at 375 for 8-10 minutes.

Now, I am not a “perfectionist” baker by any means. I usually take every ingredient, throw it in the blender and go. They always turn out amazing! Just a helpful note, molasses does not smell great or taste good on its own. The cookie dough, before bakes, will not smell amazing or taste all that good. Once it is all baked they taste so wonderful!

So GO, whip up a batch, grab a glass of milk, sit by the fire and watch some Christmas movies!
